Hidden Gems : Confit Duck Leg and Quince Terrine

In their contribution to Evogro Cooks, Kieran prepared a Confit Duck Leg and Quince Terrine. The duck leg is slowly cooked and pressed until set. This is accompanied by poached quince, pomegranate gel and a blanched spring onion.

Then completed with caramelised walnuts, a sourdough wafer, pomegranate seeds, and of course freshly picked Evogro basil. Both lemon basil and the much harder to source purple shiraz variety, whose colour pairs beautifully with the plate.
